I'm finally getting back to finishing up the RV recipes that were mentioned or photographed in previous blog posts. These are all whole food, plant-based (WFPB) meals that we ate on the road, and in many cases, we have tailored our at-home recipes to make them a bit easier to prepare in the smaller confines of an RV (not to mention, smaller fridge ;-)
This next recipe is another go-to recipe just about every day for our breakfast/brunch meal. We have two versions: the at-home one is based on Carol's 8-Grain Hippie Porridge, and the RV-version simplifies to a base of steel-cut oats.
Here is a picture of this morning bowl of goodness. We're no slaves to dining etiquette, so the plastic rubbermaid bowls worked out great for us ... and they are light-weight and quiet in the RV ... and big enough for a bowl full of porridge.
